Kitchens built for the delivery app

A ghost kitchen has no dining room and often no storefront. Several restaurant brands cook in private units under one roof, orders arrive through the delivery apps, and couriers collect bags from a pickup counter or shelf. With five or ten brands working side by side, the building runs almost every hour of the day, and dirt accumulates faster than in any single restaurant.

Mountain View Janitorial Co keeps the shared parts of those buildings clean and supports individual units on their own schedules, so operators can focus on order times instead of floor drains.

Delivery-only cooking in the South Bay

Silicon Valley’s delivery demand has already filled purpose-built sites. These delivery kitchens can house a dozen or more brands under one roof. Mountain View offices and apartments sit well within the delivery range of kitchens like these across the county.

Smaller versions are common too: a restaurant renting its kitchen to a second virtual brand after hours, or a commissary that sets aside units for delivery-only tenants. Whatever the format, the cleaning challenges follow the same pattern of constant use and very short gaps between rushes.

Turnovers measured in minutes

Lunch and dinner peaks leave little room for cleaning. We plan around the quiet stretches, usually mid-afternoon and overnight, and work the common areas in a fixed loop: packing tables, shared sinks, the floor along the main corridor, trash and recycling rooms, then restrooms and the staff break area.

Overnight visits handle the heavy work: degreasing walls and equipment fronts in shared areas, scrubbing quarry tile and sealed concrete floors, clearing and cleaning floor drains, and washing mats. Units that buy service on their own get it in the window their brand chooses.

Packing stations and courier pickup

The packing line is where a brand’s quality shows up in the customer’s bag. Packing tables, label printers, bag racks and lid and container shelving are wiped and kept free of sauce drips and crumbs, and the floor beneath them is mopped so cardboard and plastic film do not pile up under the counter.

Courier pickup shelves, order screens and the lobby where drivers wait take a beating from foot traffic and rain. Glass, handles, shelves and kiosks are cleaned, the entry mat is vacuumed or swapped, and the floor gets a wet clean so drivers are not tracking grime back into the kitchen corridor.

Cold storage and drains

Shared walk-ins and freezer rooms are cleaned on a set schedule: floors, door gaskets, handles and shelving, with each brand’s product moved and returned exactly where it was. Spill-prone shelving is wiped down so one brand’s sauces do not drip onto another brand’s prep containers.

Floor drains are flushed and their grates cleaned so standing water and odors do not reach the packing line.

Shared kitchens next door

Some buildings run both models under one roof: units for delivery brands and hourly stations for caterers and bakers. The hourly side has its own changeover needs, described on our shared kitchen cleaning page, and both can sit on one plan and one invoice.

Every visit also covers restrooms, locker rooms and the break room, with soap, paper and towels topped up. Crews are background-checked, and supervisors run quality inspections and report back to the site manager after each check.

What sets the price

Pricing follows the number of units and brands, the size of the shared corridor and packing area, how many daytime resets you want between rushes, overnight floor and drain work and cold storage size. Sites that need a day porter through the dinner rush get those hours quoted separately.

A few useful answers

Common questions

When do you clean a kitchen that is open most of the day?

In the quiet stretches. Short resets fit between the lunch and dinner peaks, and the heavy floor, drain and degreasing work happens overnight.

Does the service reach the shelf where drivers grab their orders?

Yes. Pickup shelves, order screens, entry glass, mats and the courier lobby floor are part of every visit.

Can each brand in the building get its own schedule?

Yes. Brands that buy unit cleaning choose their own window, and the common areas follow a separate routine.

How is a ghost kitchen different from a shared kitchen?

A ghost kitchen rents private units to delivery brands; a shared kitchen rents hourly stations to many tenants. Cleaning for the second centers on changeovers between bookings.
